Tasty Mediterranean Diet Recipes for Breakfast.  You may have heard of all the health benefits of the Mediterranean Diet. You may have read that the Mediterranean Diet is a tasty, healthy diet that allows you to lose weight while still eating delicious foods. You may just be interested in Mediterranean cuisine. Whatever the case, read on for Mediterranean diet recipes that are simple, healthy, and include ingredients that are available not just in Mediterranean regions.  Enjoy these Mediterranean breakfast recipes.

Turkish Bread Topped With Smoked Salmon and Hummus. (Serves 2)

Ingredients:

2 slices Turkish bread, sliced down the middle to form 2 squares.

2 Tabspns hummus

4 smoked salmon slices

1 avocado

1 medium tomato lettuce,

a few leaves

1 cucumber

chopped fresh dill

chopped fresh chives

2 teaspns capers

1 teaspn virgin olive oil

2 lemon wedges

salt and pepper

Method:

Toast Turkish bread if desired. Spread generous serve of hummus onto each slice. Top with all other salad ingredients, then smoked salmon slices. Garnish with fresh herbs and capers. Squeeze lemon juice over the top. Drizzle with a little virgin olive oil. Flavor with salt and pepper if desired.

Oily fish such as salmon is consumed on a regular basis on the Mediterranean Diet. The omega-3’s that are contained in these types of fish are excellent for heart health.

Mediterranean Style Omelet. (2 generous serves, or 4 with toast.)

Ingredients:

1 medium tomato,

diced 1 bell pepper,

any color 1/4 cup pitted Kalamata olives,

chopped 2 cloves garlic

2 green onions,chopped

1 teaspn extra virgin olive oil

1 teaspn lemon juice

1 Tabspn fresh parsley, chopped

2 Tabspn skim milk

4 eggs

1 Tabspn fresh herbs, chopped,

select whatever you prefer, eg: chives, oregano, rosemary, or basil

2 oz feta cheese, crumbled

Method:

Combine tomato, bell pepper, olives, garlic, green onions, olive oil, lemon juice, and parsley in a small bowl. Let sit for a few minutes. Combine eggs, milk, and herbs in another bowl, and whisk. Heat non-stick fry pan or specific omelet pan, and add half the combined egg mix. Reduce heat, cook for 1 or 2 minutes. When omelet has browned around the edges and the top has lost most of its moisture, add half of the vegetable mix, to one side only of the omelet. (Much like cutting a circle in 2.) Add half the feta cheese. Gently fold omelet over to cover the cheese and vegetables, creating a half circle.Cover the pan and cook for about another minute. Turn off heat and allow omelet to sit a little longer until warmed through. Then gently slide onto plate.Repeat above instructions with remaining ingredients.

Can be served with Turkish bread drizzled with extra virgin olive oil, or a high grain crusty bread. (Remember traditional Mediterranean recipes would not be using butter on the toast or bread.)

I know that our economy crisis prevents us to be a stay at home mom or dad.  We all have to work two and sometimes three jobs to make ends meet. I have dedicated myself to creating recipes that are identical, in every way to the ones we consume now.  With the proper use of, sugar free honey, for instance,you can eliminate any brown sugar from your recipe.  No taste change.  No aftertaste.  Cookies flatten properly during the baking process.  They smell delicious and taste even better.  There was a time, you had to refrigerate all sugar free baked goods, immediately.  If you did not, the goodies were stale within twenty four hours.  No longer is this necessary, except for food and cheesecake, for instance, which must be refrigerated anyway.

Diets are too stressful and costly for most of us. It’s a roller coaster way to lose weight. Eat well using my recipes and lose weight

What is a diet?  Why do we diet?  Well, first of all, a diet is, for the most part, eating less food and eliminating most desserts.  We eliminate desserts because they have too much sugar and fat.  We must eat less food because our stomach is accustomed to eating too much food.  What is the solution to this problem?  First of all, if you eat three meals a day, and never skip a meal, if you do this, you will never gorge on any food. One more tip, and this is important, when you feel satisfied and are no longer hungry, stop eating.  Put your plate into the refrigerator.  Eat the balance of your dinner later as a snack.  Do the same for breakfast and lunch.

Your stomach is similar to a balloon.  The more you put into it, the more it blows up.  As your stomach grows, bigger and bigger, it will require more food to be satisfied. When you feel like eating, because you think you are hungry, eat a salad.  Stay away from store bought salad dressings.   These dressings are very high in fat content. I use lemon juice and olive oil with a little sea salt and garlic. A bowl of soup is good and if you use any of my recipes, there are many really good snacks to make.  These snacks take very little time to do and they are drastically low is sugar and fat calories. The best hint of all is, it only takes three days to shrink your stomach.  Here is the common sense part of so-called dieting.  Once your stomach shrinks it tells you that it’s full.  You do not need to overfill your stomach to feel good.  If you put too much gas in the tank of your car, it will overflow.  If you put too much air into a balloon, it will burst.  Your food has to go somewhere, so it turns into fat and your poor stomach stretches and becomes uncomefortable.  This feeling also, makes you feel tired and that energy you had, at one time is lost.  On my website you will find a food forum.  This is the place to get directly in touch with me.  I will answer any questions you might have regarding weight loss and diabetes.   view my website at www.theresasolution.net.

Another great place to see some of the wonderful photos of the types of food I am presenting to you is on my photo page.  Here you will see desserts of all kinds, and great entrees.  Everything is low calories, without taste change.  You must remember, it thirty years to develop these recipes.  This was no easy task.  I am a diabetic and I know very well that the food and baking industry is neglegent is offering us an alternative to the very fattening foods they sell.

The reason I put so much time and energy into developing these superb recipes was my family.  My mother became totally blind from poor food choices and had every ailment in the book and died of a massive heart attack.  My father lost both of his legs to poor food choices and also had a very bad heart.  My oldest brother lost both legs for the same reasons and my youngest brother has already lost one foot. Except for my youngest brother, my family is now gone. This must stop.  Don’t you think that it is time to stop and think about the future you are making for yourself and your children.  The children are innocent, and in Gods eyes, are your responsibility.  Do the right thing, if not for yourself, for them.  Save these beautiful babies from all the harm and pain that is in their future.

The food and baking industry will not help you, unless there is a big enough profit in it for them.  I believe in the old saying, “If you want something done the right way, do it yourself.”
